ROMAN COOKING – CODA ALLA VACCINARA

Coda alla Vaccinara is one of the most important historical dishes of the Roman tradition.

The recipe originates in the “Regola” neighbourhood where were located the workshops of vaccinari (tanners of skins). The tanners bought the cattle mantles with the tail remained.

And so they invented one of the most exquisite recipes of Italian cuisine.
